The knife types, explained

The chef's knife - the gyuto - is the cornerstone of any knife collection. This knife is used for the vast majority of cutting tasks in general cooking.
Santoku is the Japanese version of an all-round knife, it is fantastic for chopping, slicing and slicing meat, fish and vegetables.
The Bunka is a Japanese all-round knife with a distinctive triangular blade and a prominent tip – the so-called reverse tanto profile.
The utility knife is a really good small all-round knife, it is fantastic for smaller tasks in the kitchen such as fruit and vegetables.
The nakiri is the traditional Japanese vegetable knife, easily recognised by its rectangular shape.
The bread knife is one of the basic knives in every kitchen.
